THE ULTIMATE BREAKFAST PIZZA

Menu the ultimate waker-upper – country sausage gravy breakfast pizza. Chef-mate Country Sausage Gravy is evenly spread over a par-baked pizza crust, then sprinkled with cheddar cheese and red and green bell peppers. After the pizza is baked, it’s topped with scrambled eggs and green onions and served hot for a melty, hearty breakfast classic guests won't be able to resist.

INGREDIENTS:

Par-baked pizza crust, 14”, premade 1 each
Chef-mate Country Sausage Gravy 1 ½ cups
Cheddar cheese, sharp, thick shredded 1 cup
Bell peppers, red, diced, sautéed ¼ cup
Bell peppers, green, diced, sautéed ¼ cup
Eggs, scrambled 1 cup
Green onions, sliced on a bias 2 Tbsp.

INSTRUCTIONS:

Preheat oven with pizza stone (or Turbo Chef) to 425F.
Spread country sausage gravy evenly across par-baked pizza crust, leaving 1” of clearance around the edges.
Evenly sprinkle the cheddar cheese over the country sausage gravy. Follow with the red and green bell peppers.
Place pizza in the oven and bake for ~5-7 minutes or until the cheese is melted and lightly browned.
Remove the pizza from the oven and transfer to a serving vessel. Top with scrambled eggs.
Garnish with green onions.
Serve immediately.

A tortilla layered with cheese is toasted until perfectly golden on a large skillet, topped with browned and crispy Chef-mate Corned Beef Hash, drizzled with horseradish sauce, and folded in half for a handheld hunger-hero that’s perfect for brunch, an app, or happy hour snacking.

INGREDIENTS:

Chef-mate Corned Beef Hash 4 cups
Oil, vegetable 1 Tbsp.
Shredded cheese 1 cup
Horseradish sauce or Chipotle mayo ¼ cup
Tortillas, flour 4 each
Butter 2 Tbsp.
Sour cream 1 cup
Salsa 1 cup

INSTRUCTIONS:

Heat oil in a medium sized skillet on high heat and start to render the corned beef hash until brown and crispy.
For each quesadilla, add some butter to a large sauté pan over medium-low heat and melt. Place down the tortilla and sprinkle with cheese. Cook until the cheese is melted and each tortilla is slightly toasted.
Top the tortillas with the corned beef hash. Drizzle with horseradish sauce and gently fold in half.
Toast both sides until golden brown and crispy.
Remove from heat and cut in half. Transfer to serving dish alongside sour cream and salsa.
Serve immediately.

THE GRAVY STATION

YIELD: 6 standard portions PREP TIME: 2 Minutes COOK TIME: 5 Minutes

Simple and delectable, this recipe gets its dippable consistency by blending Chef-mate Country Sausage Gravy with milk; it’s just perfect served alongside pieces of warm, fresh rosemary garlic focaccia. INGREDIENTS:

Chef-mate Country Sausage Gravy 2 cups
Milk, whole 1 cup
Black pepper Pinch
Green onions, thinly sliced 1 tsp.
Rosemary garlic focaccia, large pieces As needed
Sour dough, rolls
Pretzel bites
Brioche, Large croutons

INSTRUCTIONS:

In a blender, combine the country sausage gravy and whole milk.
Gently pulse together until a semi-smooth mixture is formed. Be sure small sausage particulates are visible.
Transfer mixture from blender to a small saucepan.
Place saucepan on a low flame and heat through, whisking continuously.
Transfer to serving vessel. Garnish with black pepper and green onions.
Serve immediately with bread pieces.
